Vegan Waffles!

As someone who has a sensitive stomach, these waffles are a God send. I love that they are approachable health food, and incredibly easy to make. If you can mix with a large spoon, you can do it! The only special equipment you will need is a waffle iron. Just because this is a vegan recipe, don't worry. Let's get started.

Whole Wheat Waffles
  • 1 cup of organic whole wheat flour
  • 1 cup of organic, unbleached, all-purpose flour (for those of you with sensitive stomachs like me, this will be crucial)
  • 1 tablespoon & 1 teaspoon of baking powder
  • 1 tablespoon ground cinnamon (I use Vietnamese Cinnamon and I'd highly recommend it! it uses a much milder)
  • 1/2 teaspoon kosher salt
  • 2 cups nondairy milk (almond, soy, or rice) -I like to use Organic Silk Soy Milk
  • 1/4 cup water
  • 1 cup organic applesauce  (I like to use unsweetened)
  • 5 1/2 tablespoons (1/2 stick plus 1 tablespoon) (1/2 cup) vegan butter, melted (or flaxseed oil, hemp oil, or extra-virgin olive oil) (I like to use Smart Balance brand)
To make the batter:

Mix all the dry ingredients in a bowl. Now you're going to add the milk, water, applesauce and the melted butter (I just melted it in the microwave) into the bowl with the dry ingredients. Make sure it's all well incorporated. No one wants a bite of flour. Once it's well mixed you can use a regular spoon to pour the batter onto the iron. Depending on your waffle iron type, this will determine how long they will take to cook. My iron takes about 8 minutes. However, some take about 5 minutes, you'll just have to play around with your waffle iron.

Maple-Berry Syrup
  • One 10-oz bag of organic frozen mixed berries (you can choose other fruit like I did. I love peaches, just make sure you keep the ratios correct)
  • 1/2 cup water
  • 1/4 cup real maple syrup

To make the syrup:
Set your saucepan on the heat. Put the water and maple syrup in the sauce pan and add in the frozen fruit of your choice. Take the syrup off heat when the fruit is soft.

It's been a long time since we have posted anything so we would first like to apologize! Finals week is always extremely stressful and chaotic but we survived and we are onto the next semester.
